Cornflakes and Grandma

One of the most fascinating people I can remember was my Grandma Pearce.  I was born to my parents when they were in thie mid 40's so my grandparents were advanced in years by the time I came along.  My grandfather was 3/4 Cherokee Indian and looked as if he could dance up a raincloud at any minute.  My grandmother was a plump little grandma with blue eyes and gray hair done up in a knot at the back of her neck.  She seems to be looking at me from the mirror the older I get.



Grandma's kitchen was one of my favorite places to be.  It was so alive and "happy".  She sewed her own curtains and chair cushions and you could bet (and win) that they were always out of some kind of red fabric.  Red was her favorite color.  Even the metal kitchen table and chairs were red!



I always felt special at my grandparents' breakfast table because when she made coffee for them, I got a cup too.  Sanka instant coffee was what she kept in her cabinet and I can still see the bright orange wrapper around the jar. MY coffee had lots of milk and sugar with just enough Sanka to change the color.  I drank it like it came from Starbucks and it was good to the last drop.  Oh, wait, that's another brand.  Anyway....maybe that's where my love for "gourmet" coffee was born.



Grandma always cooked a big breakfast and dinner and throughout the day you could lift the corner of her red tablecloth and help yourself to whatever was left.  Supper was a different story, however.  I guess she figured she'd done all the cooking she was gonna do for one day and you could bet (and win again) that there'd be a gallon of milk and a box of Kelloggs cornflakes in the middle of the table.  No use thinking you could get anything else---the table had been cleared and the kitchen had been cleaned--ready for another day.



Thinking about her today reminded me of this recipe for Peanut Butter Cornflake Cookies.  You will need:



3/4 cup white Karo Syrup



1 teaspoon vanilla



3/4 cup granulated sugar



1 cup peanut butter



4 cups cornflakes



Mix the syrup and sugar together and microwave on HIGH for 3 minutes.  Stir in peanut butter and vanilla until melted.  Stir in the cornflakes and spoon onto wax paper and let cool.



Although you'd never catch my grandma making cookies out of her cornflakes, I love to make them because they're quick and really good.  I'm thinking I might have a couple for supper and I'm thinking I'm gonna put them in a bowl, just in case grandma's looking.  Love you grandma.
