When that big bottle of Coca-Cola goes flat, don't throw it out, make a cake out of it!
Wow! It's getting hot outside and no doubt you'll be drinking lots more fluids to try to stay cool. For most people, water is the drink of choice, but for some of us, we tend to reach for the sodas first. I know, I know, I gotta start thinking before I reach for that soda bottle. I buy the big bottles of Coca-Cola at home and sometimes, although not very often, part of it will go flat. Don't throw it out, make a cake out of it! It's a really good cake that has been around for a long time, always gets rave reviews and you'll probably be taking home an empty pan. I like to make this cake because it's easy and you ice it while it's still warm so you're finished with it long before other cakes. You will need:
2 cups flour
2 cups sugar
1 teaspoon soda
3 Tablespoons cocoa
2 sticks of butter or margarine
1/2 cup buttermilk
1 teaspoon vanilla
2 eggs, slightly beaten
1 cup Coca-Cola
In a saucepan, mix butter, cola and cocoa. Bring to boil. In mixing bowl, add flour and sugar. Pour hot mixture over these dry ingredients. Stir well.
In small bowl, mix buttermilk, vanilla, slightly beaten eggs and soda. Add to other mixture. The batter will be thin. Pour into a prepared pan and cook at 350 for about 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
1 stick butter
2 Tablespoons Coca-Cola
2 Tablespoons Cocoa
1/2 teaspoon vanilla
1/2 to 3/4 box powdered sugar.
Melt the butter, add the cocoa and stir. Add Coca-Cola and vanilla and mix well. Pour over the powdered sugar and mix with a mixer until well blended. Pour over cake and wait for it to cool, if you can.
While you're waiting for it to cool, fix yourself a nice glass of Coca-Cola. You know you've got to get that next bottle open so you'll have a reason to make another cake. You really don't have to use flat coke. You can use it as soon as you get it home from the grocery store but it's just a good way to utilize something you would othewise throw away. Enjoy this cake and remember to cook easy, but eat good!
