Wanna make a fortune?  Me too!

Everybody I know would like to have more money.  Oh, if I could only make a fortune my life would be wonderful.  I'm sure you realize, as I do, that there are many fortunes in life that come our way.  I am very fortunate to have wonderful family and friends, my job, my health and although some would strongly argue the point, I feel I am very fortunate to have a sound mind.  Yeah, yeah, go ahead and laugh, but at least I think my mind is sound and that's all that counts, huh? 

Much to my dismay, I have come to realize that  making a fortune at my age is becoming less likely with each passing year.  But never fear!  I have discovered a way to make my fortune, a lot of them really, and you can too.

To make your fortunes you will need:

3/4 cup unbeaten egg white

1 2/3 cup sugar

1/4 teaspoon salt

Add the following ingredients to the above mixture one ingredient at a time:

1 cup melted butter

1 cup flour

2/4 cup finely chopped blanched almonds

Beat until well blended.  Space cookies apart on a cookie sheet LIGHTLY sprayed with cooking spray.  Be sure you don't crowd them because they really spread.  Bake in a 350 degree oven for 10 minutes.  Remove from cookie rack before they cool and harden.  Fold fortune in cookie and fold the cookie over to seal.  You'll need to have your fortune messages ready to place in the cookie before you start making them because once they're removed from the oven, you have to work fast.  I type the fortune messages on a sheet of typing paper, cut them into strips and have them ready to put in my cookie the minute they come out of the oven.

These cookies are a lot of fun because the ideas and uses for them are endless.  You could use them at a birthday party, wedding shower, baby shower or my favorite, Valentine's Day.  Put a few drops of red food coloring in them and make your messages reasons why you love him (or her).  What a wonderful way to let someone know all the reasons they are loved.  I know you'll have lots of other ways to use them too and I'd love to hear your ideas.
